Q. What is a compote?
A. Compote is similar to fruit preserves. It is a mixture of fresh or dried fruit, lemon zest and sugar, cooked down to a thickened state and is usually served as a standing dessert or in some combined form with another dessert.

Q. What is the difference between American and Italian buttercreams?
A. American buttercream is a basic frosting made of butter, shortening, confectioner's sugar, and flavoring that is creamed using a mixer. Italian buttercream is made with whipped egg whites, cooked sugar, butter, and flavoring, requiring a more advanced process of creaming. It is smoother and lighter in texture than American buttercream but very stable.

Q. Why are custom cakes so expensive?
A. Our cakes are not pre-made or commercially manufactured store products. You are not just paying for raw materials, but also for the time it takes the artist to create a special, one-of-a-kind edible work of art just for you. Many variables factor into the total cost of your cake including the complexity of your design, number of servings, flavors, special colors (such as edible metallic), and special effects (such as gravity cakes). Because of the many different variables involved in a custom cake, it is nearly impossible to provide a quote for your cake until after all variables have been factored in. A customary guide for wedding cakes is pricing on a per person (p/p) basis. The total cost can range widely, from $3 - $25 per person, depending on your baker and the variables previously mentioned.

Q: Since my cake is custom, I can choose any theme or design I want, right?
A. Yes and no. While we want your cake to be a true reflection of your personal style and theme and will work with you on creating a pleasant design aesthetic, Jolani's has the right to refuse service if we deem that a theme or design is not in alignment with our company values, morals, or ideas of tasteful artistry.
